This lot comes from the Sambewe AMCOS cooperative, which consists of 442 producers. After harvest, the cherries are sorted and then dried on raised tables. Mixed every two hours during the first 10 days, dried for 24 to 30 days depending on the weather and humidity.
Interesting fact: on the bag of green is written in capitals WASHED, and inside… natural. But seriously – everything said “washed”: the look of the beans, the clarity of flavour, etc. And then the first cupping and… boom – high sweetness and heavier body. A heavy fuss was made. I thought something was wrong here, but the importer confirmed – it’s natural.
It turns out that this is a pretty common issue in Tanzania: the bags have the standard washed print, because that’s the most common processing method, and they use it for everything. And that the coffee looks washed? Well, as you can see, naturals from Tanzania can come very close to washed – both in taste and appearance.
